Grapefruit Rosemary Gin Spritz

NYE is just around the corner, and although I’m not big on counting down to midnight (toddler New Year’s ball drop at 9 pm is TRULY where it’s at), I still like to partake in a fancy cocktail and pretend I’m not old. Festive, bubbly, and refreshing, this grapefruit rosemary gin spritz is the perfect thing to be ringing in the new year with. It’s also great for batching if you’re having a big shin dig and don’t want to be making cocktails all night.

I like to make this drink two ways- over a big glass of ice, or shaken and put in a fancy coup glass, depending on my mood. Either way I’m left with a tasty drink that goes down a tad too easy. Cheers!

Grapefruit Rosemary Gin Spritz

Ingredients:

Grapefruit Rosemary Simple Syrup

the peel of 1 grapefruit, pith removed

3 sprigs of rosemary

1 C sugar

1 C water

Grapefruit Rosemary Gin Spritz

2 oz gin

1 oz grapefruit juice

2 Tbsp grapefruit rosemary simple syrup

4 oz prosecco

grapefruit seltzer water

1 slice grapefruit

1 rosemary sprig

In a small saucepan combine grapefruit peel, rosemary sprigs, sugar, and water. Heat over medium heat until the sugar has completely dissolved. Remove from heat and and let the simple syrup steep for 15-20 minutes. Strain syrup through a fine mesh sieve into a sealable container. Let cool completely.

In a cocktail shaker filled with ice, combine wine, grapefruit juice, and grapefruit rosemary simple syrup. Shake until cold, and either strain into a glass filled with ice, or into a large coup glass. Add Prosecco and top with grapefruit seltzer water. Garnish with a slice of grapefruit with a rosemary sprig skewered through the center.

Yields 1 cocktail.
