Anyone else hoping that the Easter bunny will bring some hand sanitizer and disinfectant wipes in their Easter basket this year? Or maybe an Econo pack of toilet paper and a bottle of something adult to sip on? My 24 Carrot Gold cocktail will definitely do the trick whether or not the big bunny will be coming to your house this year. I mean, he was listed as a COVID-19 essential worker in New Zealand, so our odds are good, no?

This cocktail is definitely not just for wascawwy rabbits! Carrot and pineapple juice, gin, orange liqueur, lemon, and ginger beer all come together in a refreshing sweet tart salad of a cocktail. And hey, if you don’t have some (or any for that matter) of these ingredients, just throw whatever booze you have on hand in a glass with ice and drink until you see Jesus in an ice cube. Ingredients:

2 oz dry gin

1 oz Cointreau

3 oz carrot juice

2 oz pineapple juice

2 oz lemon juice

dash of orange bitters

ice

ginger beer

carrot ribbons for garnish

In a cocktail shaker filled with ice, add gin, Cointreau, carrot juice, pineapple juice, lemon juice, and bitters. Shake vigorously and strain into two highball glasses filled with ice. Top each glass off with ginger beer and a slice of carrot ribbon for garnish.
