Curried Chicken Salad

Today I have one of my favorite easy as can be recipes to share with you. It is sweet, salty, crunchy, herbaceous, and comes together in less than 30 minutes. This curried chicken salad is loaded with apples, celery, cilantro and cashews, packing a whole lot of crunch in each bite. It’s also a great recipe to use up any leftover chicken you may have hanging out in your fridge. So say bye-bye to those sad desk lunches- your sandwich never tasted so good.

Curried Chicken Salad

Ingredients:

3 C roasted chicken breast, diced into 1/2” pieces

1 fuji apple, diced (pink lady or honeycrisp would also work well)

2 stalks of celery, thinly sliced

4 green onions, thinly sliced

1/3 C cilantro, finely chopped

1/2 C raw cashew pieces

1/3 C mayo

1 Tbsp curry powder

1 tsp turmeric

1/2 tsp kosher salt

1 Tbsp apple cider vinegar

Combine all ingredients in a large bowl and mix until combined. Serve it in lettuce cups, collard green wraps, on pita, or your favorite toasted bread.
